Immune-Boosting Vegetable Soup for the Soul
- 2 carrots, diced
- 1 onion, diced
- 1 parsnip, diced
- 2 celery stalks, diced
- 1-inch ginger piece, peeled and grated
- 2 tsp turmeric powder
- 2 tsp coconut oil
- 5 cups purified water
- 1/4 tsp sea salt
- 1 lemon, juice only
- Freshly ground black pepper
- Fresh parsley leaves, to serve
- Add all the ingredients, except the lemon juice, to a soup pot, bring to boil over medium heat, then simmer over low heat for 30 minutes.
- Season with salt and pepper, add the lemon juice and serve warm, garnished with fresh parsley leaves.
