Cucumber Lime Agua Fresca with Chia Seeds
- 1&1/2 cups purified water (or coconut water for extra flavor)
- 2 tbsp chia seeds
- 1 lime, peeled
- 1 large cucumber
- 5–6 mint leaves
- Optional: sweetener of choice
- Place water in a pitch or jar, add chia seeds, mix well and let soak for at least 15 mins.
- Juice the cucumber, lime and mint, and add the liquid to the chia mixture.
- Stir well to combine and drink.
