Broccoli Quinoa Salad
- 2 cups cooked quinoa, cooled
- 1 bunch fresh mint, chopped
- 1 bunch fresh parsley, chopped
- 1 small broccoli head, cut into small florets
- 2 green onions, chopped
- 1/4 cup almond flakes
- 1 tbsp kelp powder
- 1 avocado, peeled, pitted, cut into small cubes
- 1 tbsp apple cider vinegar
- 2 tsp tamari
- 2 tsp extra virgin olive oil
- Add all the ingredients into a bowl and toss to combine.
- Set aside for 10 minutes before serving, to allow the flavors to combine.
