Homemade Vegan Almond Butter Cups (Healthy Treat)
These vegan almond butter cups will quickly become your favorite treats, even if you’re not a big fan of vegan desserts.
The almond, coconut oil, and raw cacao combination is definitely a hit – it makes these almond butter cups heavenly and also provides your body with much-needed nutrients.
Almonds are a great source of the key minerals magnesium and calcium, and are also loaded with protein. Raw cacao powder gives your liver the antioxidants it needs to neutralize free radicals and whisk them from the body.
The healthy fats in coconut oil contribute to a better absorption of the antioxidants in raw cacao. Pair these three ingredients with potassium-loaded dates to obtain a delicious and nutritious vegan almond butter cup.

- Yield: 6-8 1x
Ingredients
- 1/2 cup raw almonds
- 1 tbsp raw almond butter
- 1 tbsp almond meal
- 1 tsp coconut oil
- 2–3 drops vanilla extract
- 5–6 dry pitted dates, soaked overnight in purified water
- 1 tbsp raw cacao
- 1 tsp coconut oil
Instructions
- In a food processor add the almonds, almond meal, coconut oil, vanilla extract, almond butter and pulse to obtain a sticky mixture.
- Distribute evenly into silicone mini cups and press well with your fingers.
- Add the drained pitted dates, raw cacao and coconut oil into the food processor and pulse to obtain a creamy sauce.
- Pour this evenly on top of the almond layer.
- Freeze for 1 hour, then serve.
