Raw soups are like a savory version of smoothies and I love to have them as a quick lunch because they are energizing and intensely detoxifying. This spinach soup is one of my favorite raw treats. It has a gorgeous green color, tastes fantastic, and is packed with exceptional nutrients. It’s ready in just a few minutes and you can pack it to go and have it at the office or in the park.
Green leafy plants are the veggies to stick with for your every day diet. There isn’t a better choice for bringing oxygen to your body’s cells, which cleanses them and helps them eliminate toxins and restore themselves.
Spinach is one of the key ingredients for a natural detox because it has an tons of nutrition your body craves at its core. Like its relatives of the chenopod veggie family (including beets, quinoa, and chard), spinach is an antioxidant storehouse, containing high concentrations of carotenoids and flavonoids which diminish the damaging effects of free radicals and slow down the aging process.
Some of the flavonoids in spinach also offer you anti-inflammatory protection, with excessive inflammation being one of the top risk factors for developing cancer. That’s just one more reason to include spinach in your regular diet, it effects your current health while also protecting your long-term health.
Spinach is also an excellent source of vitamin E, vitamin A, manganese, zinc and selenium, which are all antioxidant nutrients, reducing the health problems related to oxidative stress. Also, the unique compounds in spinach protect the lining of the digestive system from inflammation-related damage and reduce the symptoms of the conditions associated with inflammatory bowel disease.
You can get the maximum benefit from the nutritional power of these vegetables by having them raw, and this soup is a great example of a nourishing meal made with raw ingredients. Zucchini, avocado, parsley and celery are all packed with detoxifying ingredients to support the natural cleansing processes of the body.
Serve this soup cold or slightly warmed and enjoy its delicious taste and its energizing effects.
- 1 cup fresh spinach leaves
- 1 avocado, peeled and cut into chunks
- 1 cup purified water
- ½ lemon, juice only
- 1 celery stalk
- ½ cup fresh broccoli florets
- 1 small onion, finely diced
- 1 garlic clove, minced
- 1 inch ginger piece, peeled
- ¼ tsp sea salt
- Freshly ground black pepper
- Mixed seeds, to garnish
- Add all the ingredients into the blender and process to obtain a creamy soup.
- Divide into serving bowls, garnish with mixed seeds and serve.
